Easy and Delicious Crowd Pleasers
An easy, breezy summer get-together is a great way to gather friends for some effortless fun, but some thoughtful planning really helps make your party memorable. You can easily avoid a messy, hasty summer cookout by preparing a few easy recipes that make sure your guests are well fed, entertained and happy. Here are a few of our favorite recipes.
Fajitas in a Foil Packet
Prepare a large zip top bag with your favorite vegetable seasoning. This can include cajun seasoning, cumin and lemon juice. Cut a whole onion and two or three bell peppers, and place them into the zip lock bag. Shake the bag to season the vegetables. Unroll 2-3 feet of aluminum foil onto a flat surface, and pour the vegetables onto the center. Add some peeled raw shrimp to the pile, and squeeze some fresh lime and a pinch of kosher salt over the shrimp. Cover the packet with a second piece of foil. Crimp the edges, and place onto the grill for 10-15 minutes. While the fajitas are cooking, warm some fresh tortillas on the grill, and then serve with guacamole and hot salsa.
Chicken, lamb and steak are popular meats for kebabs. Vegetarians can substitute firm tofu for the meat. Marinate the meat in a mixture of seasoning with plenty of citrus juice to help tenderize. Select complementary vegetables like zucchini, onions, pineapple, potatoes, squash and bell peppers. Make sure to cut them to a similar size as the meat. Select metal or wooden skewers. If you use skewers made from wood or bamboo, soak them in water for 30 minutes to prevent excessive burning. Stack the meat and vegetables on the skewers, and place them onto the grill, or just let your guests build their own kebabs while you serve them slices of warm pita bread with seasoned rice.
Mixed Vegetable Medley
For a healthy and colorful side dish, prepare generous portions of zucchini, squash, broccoli, artichoke, kalamata olive and bell pepper in a mixing bowl. Add a dash of olive oil to coat the veggies in a thin layer. Add salt, pepper, lemon juice, tomatoes and basil. Cook the vegetables by placing them into a steamer over boiling water. Add additional seasoning according to your personal taste. Mixed vegetables can be combined with penne pasta for a unique twist. Serve on the side with corn and mashed potatoes.
