MEAT CHURCH 0–400 CHICKEN WINGS
The 0–400 method is an easy way to get lightly smoked wings with crispy skin. Simply place the wings on a cold pellet grill, set the temperature to 400°F, and let the grill do the work. Paired with Meat Church Holy Cola BBQ Sauce, these 0–400 chicken wings are the perfect antidote to cold winter temps.
Ingredients
- Traeger smoking pellets (oak, hickory, mesquite or pecan)
- 3 lbs. chicken wings
- Meat Church Hickory All-Purpose Hickory BBQ Rub (Optional)
- Meat Church Holy Cola BBQ Sauce
Steps
- Load your pellet grill with your preferred smoking pellets. Do NOT preheat; the grill should be completely cold.
- Remove wings from refrigerator. Season lightly on all sides with your preferred rub. Let sit for 15 minutes to allow seasoning to adhere.
- Place wings on a wire rack and put the rack on the cold pellet grill. Turn grill on, set to 400°F and ignite. The wings absorb smoke as the grill heats up.
- After 30 minutes, flip the wings. Check their internal temperature and rotate wings as needed if you notice hot spots.
- Cook the wings to a minimum internal temperature of 165°F, or to 190–200°F for maximum crispiness.
- Remove the wings from grill and place them in a metal bowl. Toss with Meat Church Holy Cola BBQ Sauce. Return to grill for 5 minutes to tack up the sauce. Remove them from the grill, let cool slightly and enjoy!
