MEAT CHURCH 0–400 CHICKEN WINGS

The 0–400 method is an easy way to get lightly smoked wings with crispy skin. Simply place the wings on a cold pellet grill, set the temperature to 400°F, and let the grill do the work. Paired with Meat Church Holy Cola BBQ Sauce, these 0–400 chicken wings are the perfect antidote to cold winter temps.

  1. Load your pellet grill with your preferred smoking pellets. Do NOT preheat; the grill should be completely cold.
  2. Remove wings from refrigerator. Season lightly on all sides with your preferred rub. Let sit for 15 minutes to allow seasoning to adhere.
  3. Place wings on a wire rack and put the rack on the cold pellet grill. Turn grill on, set to 400°F and ignite. The wings absorb smoke as the grill heats up.
  4. After 30 minutes, flip the wings. Check their internal temperature and rotate wings as needed if you notice hot spots.
  5. Cook the wings to a minimum internal temperature of 165°F, or to 190–200°F for maximum crispiness.
  6. Remove the wings from grill and place them in a metal bowl. Toss with Meat Church Holy Cola BBQ Sauce. Return to grill for 5 minutes to tack up the sauce. Remove them from the grill, let cool slightly and enjoy!
